  • 1 teaspoon Cooking Salt
  • 4 ounces Broken Angel Hair Pasta Can swap with small pasta.
  • 1 cup Frozen Peas Add directly from the freezer.
For the Croutons
  • 2 cups Crusty Bread Sourdough is ideal.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 180°C (345°F). Cut the crusty bread into bite-sized cubes, toss with olive oil and salt, and bake for 8-10 minutes until golden brown.
  2. Add streaky bacon to a large pot over medium heat, cooking until golden and crisp for about 5-7 minutes, then chop into smaller pieces.
  3. Add seasoned chicken breast to the pot and sear for about 5-6 minutes until cooked through, then chop into small cubes.
  4. Melt unsalted butter in the pot and sauté finely diced onion, minced garlic, chopped celery, and carrot for 5 minutes until softened.
  5. Stir in flour until combined, then gradually pour in milk and chicken stock along with water to achieve desired consistency, and simmer for 5 minutes.
  6. Add broken angel hair pasta and corn, cooking for 5 minutes before adding frozen peas and chopped chicken during the last 2 minutes.
  7. Ladle soup into bowls, top with crispy croutons, and enjoy warm.
