  • 2 tablespoons Olive oil or vegetable oil/butter
  • 1 medium Yellow Onion diced
  • 2 stalks Celery chopped
  • 1 medium Red or Green Bell Pepper chopped
  • 3 cloves Garlic minced
For the Protein and Beans
  • 1 pound Boneless Chicken Thighs/Breasts turkey can be used instead
  • 2 tablespoons Off The Chain Seasoning/Cajun Seasoning or standard Cajun seasoning
  • 1 teaspoon Ground Cumin optional
  • 4 cups Chicken Broth or vegetable broth
  • 2 cans White Beans (Great Northern or Cannellini) rinsed and drained
For the Creamy Touch
  • 1 cup Green Chiles or jalapeños for spiciness
  • 1 cup Sweet Corn frozen corn is excellent
  • 1 cup Heavy Cream or coconut milk for dairy-free
  • 8 ounces Cream Cheese or Neufchâtel
For the Topping
  • 1 cup Shredded Monterey Jack/Pepper Jack/Cheddar Cheese your favorite mix
  • 1 large Lime juiced
  • to taste Salt & Black Pepper season to preference
  • Optional Garnishes sliced jalapeños, tortilla chips, avocado, cilantro

Step-by-Step Instructions
  1. Begin by rubbing your boneless chicken thighs or breasts with the bold Cajun seasoning and a sprinkle of ground cumin.
  2. In a large pot, heat about 2 tablespoons of olive oil over medium heat until shimmering, then add the seasoned chicken and sear for 3-4 minutes on each side until golden brown.
  3. Using the same pot, toss in diced yellow onion, chopped celery, and bell pepper. Sauté for 4-5 minutes until softened, then stir in minced garlic and cook for an additional 30 seconds.
  4. Stir in the remaining Cajun seasoning along with another pinch of ground cumin for 1 minute to toast the spices.
  5. Pour in the chicken broth, followed by white beans, green chiles, and sweet corn. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  6. Carefully remove the chicken from the pot and shred it into bite-sized pieces, then return to the chili.
  7. Lower heat and stir in heavy cream, cream cheese, and shredded cheese with lime juice. Simmer for another 5-7 minutes until creamy.
  8. Taste and adjust seasoning as needed with salt, black pepper, or extra Cajun seasoning.
  9. Ladle into bowls and garnish with sliced jalapeños, avocado, tortilla chips, or cilantro.
