  • 2 tablespoons Off The Chain Seasoning/Cajun Seasoning
  • 1 teaspoon Ground Cumin optional

  • 1 can White Beans (Great Northern or Cannellini) or chickpeas
  • 1 can Green Chiles or jalapeños
  • 1 cup Sweet Corn or frozen corn
For the Creamy Finish
  • 1 cup Heavy Cream or coconut milk
  • 4 ounces Cream Cheese or Neufchâtel
  • 1 cup Shredded Monterey Jack/Pepper Jack/Cheddar Cheese or any preferred cheese blend

  • 1 medium Lime or lemon juice

Method
 

Cooking Steps
  1. Step 1: Season the chicken with Cajun seasoning and let sit for 10 minutes.
  2. Step 2: Heat olive oil in a pot and sear chicken for 3-4 minutes on each side.
  3. Step 3: Sauté onion, bell pepper, and celery for 4-5 minutes; add garlic and cook 30 more seconds.
  4. Step 4: Add spices and toast for 1 minute.
  5. Step 5: Pour in chicken broth, white beans, green chiles, and corn; simmer for 20 minutes.
  6. Step 6: Shred the chicken and return it to the pot.
  7. Step 7: Stir in cream, cream cheese, cheese, and lime juice; simmer for 5-7 minutes.
  8. Step 8: Taste and adjust seasoning before serving.
  9. Step 9: Serve in bowls with optional garnishes.
