- Preheat your oven to 400°F (200°C). Prepare a baking sheet lined with parchment paper.
- On a lightly floured surface, roll out the thawed puff pastry until it’s about ¼ inch thick.
- In a skillet over medium heat, add diced pancetta and cook for 3-5 minutes until it becomes crispy.
- Take your softened Brie cheese and cut it into slices, then scatter them evenly over the center of the puff pastry.
- Gently fold the edges of the puff pastry over the filling, pinching and pleating the dough for a rustic border.
- Using a pastry brush, apply the beaten egg over the folded edges of the pastry.
- Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed and golden.
- Let the tart cool for a few minutes on the baking sheet and garnish with fresh thyme sprigs before serving.
