Ingredients
  

For the Tortellini
  • 20 oz Cheese Tortellini Fresh or refrigerated varieties.
For the Steak
  • 1 lb Steak (Sirloin or Ribeye) Sirloin is leaner, ribeye is richer.
For the Sauce
  • 4 tbsp Butter Can substitute with vegan butter.
  • 2 tbsp Olive Oil Essential for searing the steak.
  • 5 cloves Garlic Minced.
  • 1 cup Heavy Cream Coconut cream can be used as a dairy-free alternative.
  • 3/4 cup Whole Milk Almond milk can be used for a lighter version.
  • 1 1/4 cups Parmesan Cheese Shredded or freshly grated.
For Seasoning
  • to taste Salt
  • to taste Black Pepper
  • to taste Garlic Powder
  • to taste Smoked Paprika
  • optional Red Pepper Flakes
For Garnishing
  • to taste Fresh Parsley Chopped, can substitute with other herbs.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add 20 oz of cheese tortellini and cook for 3-5 minutes until al dente. Drain and set aside.
  2. In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Season 1 lb of steak with salt, black pepper, garlic powder, and smoked paprika. Sear for 3-5 minutes on each side.
  3. Remove steak from the skillet and let it rest. In the same skillet, melt 4 tbsp of butter over medium heat. Add 5 minced garlic cloves and sauté for 1 minute until fragrant.
  4. Pour in 1 cup of heavy cream and 3/4 cup of whole milk, stirring to combine. Allow to simmer for 3-4 minutes.
  5. Gradually add 1 1/4 cups of shredded Parmesan cheese, stirring until melted and combined. Adjust seasoning as needed.
  6. Return the seared steak, sliced into bite-sized pieces, and cooked tortellini to the skillet. Toss for about 2 minutes until coated in the sauce.
  7. Serve immediately, garnished with chopped parsley, cracked black pepper, and red pepper flakes if desired.
