Step-by-Step Instructions for Dublin Coddle
  1. Gather all ingredients: chop 2 onions, slice about 4 sausages, and 4-6 strips of bacon, cube 4 medium-sized potatoes and 2 optional carrots.
  2. In a large pot or Dutch oven, layer the ingredients starting with sliced sausages, then bacon, onions, potatoes, and carrots.
  3. Pour in enough chicken or vegetable broth to cover the ingredients. Optionally, substitute part of the broth with a cup of beer or white wine.
  4. Cover and simmer on medium-low heat for about 1 hour, stirring occasionally, until the meat is tender and vegetables are soft.
  5. Remove from heat and let sit for a few minutes before serving. Pair with crusty bread or soda bread.
