  • 1 cup corn fresh or thawed frozen
  • 1 cup cherry tomatoes halved
  • 1 medium red bell pepper diced
  • 1 medium red onion finely sliced
  • 1 medium avocado cubed
  • 1 cup cheddar cheese or dairy-free cheese for vegan
  • 1/4 cup fresh cilantro chopped
For the Dressings
  • 1/4 cup BBQ sauce adjust to taste
  • 1/4 cup ranch dressing or Greek yogurt for a healthier option
  • 1 tablespoon lime juice or lemon juice as an alternative

Method
 

Preparation Steps
  1. Drain and rinse the black beans, then set aside to drain fully.
  2. Chop the corn off the cob or measure out thawed frozen corn.
  3. Cut cherry tomatoes in half, dice the red bell pepper, finely slice the red onion, and cube the avocado.
  4. Chop fresh cilantro and prepare a large mixing bowl for assembling the Cowboy Salad.
Dressing Preparation
  1. In a separate mixing bowl, combine BBQ sauce and ranch dressing with a splash of fresh lime juice.
  2. Blend the ingredients until smooth and season with salt and pepper.
Combine Salad
  1. Combine black beans, corn, cherry tomatoes, red bell pepper, red onion, avocado, and cilantro in a large bowl.
  2. Gently stir to incorporate all ingredients without mashing the avocado.
Dress the Salad
  1. Pour the dressing over the salad ingredients and toss gently to coat.
