- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until evenly combined.
- In a large mixing bowl, cream the softened unsalted butter and granulated sugar together using an electric mixer on medium speed for about 2-3 minutes.
- Add the large egg, vanilla extract, and buttermilk to the butter-sugar mixture. Mix until fully blended and smooth.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
- Divide the cookie dough into two equal portions. Add pink gel food coloring to one half and blue gel food coloring to the other.
- Take small portions of the pink and blue dough, and gently roll them together to form swirled balls, about one inch in diameter.
