Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil.
  2. In a large mixing bowl, crack the eggs and whisk until frothy and pale.
  3. Add the cottage cheese to the egg mixture and gently stir until smooth.
  4. Stir in the shredded cheddar cheese until evenly distributed.
  5. Fold in the chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder.
  6. Combine the baking powder with a splash of water, then fold into the mixture.
  7. Add the olive oil and mix until creamy and consistent.
  8. Spoon the batter into the muffin cups, filling nearly to the top.
  9. Bake for 18-20 minutes until set and lightly golden.
  10. Let cool for 5 minutes before removing from the tin.
  11. Serve warm or store in an airtight container in the fridge for up to 4 days.
