  • 2 cups Cottage Cheese Low-fat or full-fat based on preference
  • 1 can Chickpeas Rinsed and drained
  • 1 medium Cucumber Diced
  • 0.5 medium Red Onion Diced, soak in water if sensitive to sharpness
For the Vinaigrette
  • 3 tablespoons Olive Oil Extra virgin recommended
  • 2 tablespoons Red Wine Vinegar Can substitute with lemon juice
  • to taste Salt
  • to taste Pepper

Method
 

Instructions
  1. Rinse the chickpeas under cold water and set them aside. Dice the cucumber and red onion.

  3. In a large mixing bowl, combine the cottage cheese, chickpeas, cucumber, and red onion. Fold gently to mix.
  4. Drizzle the vinaigrette over the salad and toss gently to coat.
