Preparation
  1. Begin by greasing a large 9x13 inch baking dish with unsalted butter to prevent the Rice Krispies mixture from sticking.
  2. In a large saucepan, combine 4 cups of marshmallows with 3 tablespoons of unsalted butter and a pinch of kosher salt. Heat until melted, about 5-7 minutes.
  3. Add 6 cups of Rice Krispies cereal to the pan, gently fold until evenly coated, and mix in any extra cereals.
  4. Transfer the mixture into your greased baking dish. Press firmly into an even layer and allow to cool completely at room temperature, about 1 hour.
  5. Once cool, cut into rectangles. Place ice cream on top of one rectangle and press another on top to form a sandwich.
  6. Place the assembled sandwiches in the freezer for at least 1 hour to firm up the ice cream.
