Step-by-Step Instructions
  1. In your slow cooker, add the frozen broccoli florets, chopped medium onion, diced russet potato, and sliced whole carrots. Pour in low sodium chicken broth and water, then stir in the condensed cream of celery soup along with kosher salt and ground black pepper.
  2. Cover the slow cooker and set it to cook on LOW for 6-8 hours or on HIGH for about 3 hours.
  3. Once the vegetables are tender, carefully use an immersion blender to partially puree the soup.
  4. Stir in the Velveeta cheese, grated cheddar cheese, and diced cooked ham into the slow cooker. Turn the heat to HIGH and cover again.
