- In a large pot, heat a drizzle of oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent and fragrant.
- Introduce the ground beef (or turkey) to the pot. Cook for 5-7 minutes until browned evenly, stirring occasionally.
- Add the chopped cabbage, diced carrot, celery, and potato. Stir well and cook down slightly for about 3-4 minutes.
- Mix in the tomato paste, dried thyme, oregano, paprika, salt, and pepper. Stir for about 2 minutes until spices are fragrant.
- Pour in the broth, scraping the bottom of the pot. Increase heat to a boil, then reduce to a gentle simmer. Cover and simmer for 20-30 minutes.
- Taste the soup and adjust seasonings if needed. Stir in fresh parsley just before serving.
- Ladle the soup into bowls, and serve with crusty bread or salad.
