  • 1 head Cabbage can substitute with kale or collard greens
  • 1 lb Ground Beef (or Turkey) opt for lean ground chicken or plant-based meat for a lighter option
  • 1 medium Onion or shallots/leeks for milder flavor
  • 3 cloves Garlic or garlic powder as an alternative
  • 2 medium Carrot parsnips can be used for a twist
  • 2 stalks Celery try fennel for unique taste
  • 1 medium Potato sweet potato is a tasty substitute, or omit for lower carbs
For the Broth
  • 6 cups Broth beef or vegetable works well
  • 3 tbsp Tomato Paste crushed tomatoes can replace for mellower taste
  • 1 tsp Dried Thyme swap with Italian seasoning for complexity
  • 1 tsp Dried Oregano fresh oregano is a lovely substitute
  • 1 tsp Paprika use smoked paprika for deeper flavor

For Garnish
  • 2 tbsp Fresh Parsley optional, adds freshness and color

Preparation
  1. In a large pot, heat a drizzle of oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent and fragrant.
  2. Introduce the ground beef (or turkey) to the pot. Cook for 5-7 minutes until browned evenly, stirring occasionally.
  3. Add the chopped cabbage, diced carrot, celery, and potato. Stir well and cook down slightly for about 3-4 minutes.
  4. Mix in the tomato paste, dried thyme, oregano, paprika, salt, and pepper. Stir for about 2 minutes until spices are fragrant.
  5. Pour in the broth, scraping the bottom of the pot. Increase heat to a boil, then reduce to a gentle simmer. Cover and simmer for 20-30 minutes.
  6. Taste the soup and adjust seasonings if needed. Stir in fresh parsley just before serving.
  7. Ladle the soup into bowls, and serve with crusty bread or salad.
