Step-by-Step Instructions for Coconut Chicken Rice Bowl
  1. In a large skillet over medium heat, add 1 tablespoon of vegetable or coconut oil. Allow the oil to heat up for about 2 minutes until it shimmers.
  2. Add 1 pound of diced boneless, skinless chicken breasts to the hot skillet, seasoning with salt and pepper. Sauté for 5-7 minutes until cooked through.
  3. Stir in 2 minced garlic cloves and 1 teaspoon of grated ginger. Cook for an additional minute until fragrant.
