Step-by-Step Instructions
  1. Preheat your oven to 325°F (162°C) and grease a 9x5-inch loaf pan.
  2. Mix together flour, cinnamon, granulated sugar, and brown sugar, then add cold butter and rub until crumbly. Refrigerate for 15 minutes.
  3. In a large mixing bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. In another bowl, whisk melted butter with both sugars until smooth, then add egg, vanilla, and sour cream.
  5. Fold in the mashed ripe bananas carefully.
  6. Slowly incorporate the dry mixture into the wet mixture, folding gently until just combined.
  7. Pour half of the batter into the loaf pan, sprinkle cinnamon filling, and then add remaining batter on top. Spread crumb topping evenly.
  8. Bake for 40-45 minutes, or until a toothpick comes out with a few moist crumbs.
