Step-by-Step Instructions
  1. In a medium bowl, whisk together the flour, cinnamon, baking powder, and salt.
  2. In a small bowl, dissolve the instant coffee granules with the vanilla extract.
  3. In a large mixing bowl, beat together the melted butter and brown sugar until smooth.
  4. Mix in the egg and coffee mixture until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Cover the bowl and refrigerate the dough for 30 minutes.
  7. Scoop out portions of the dough and roll into 1-inch balls; roll in granulated sugar, then powdered sugar.
  8. Place cookie balls on a baking sheet and bake at 350°F for 10-12 minutes.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
