- Soften almond butter by microwaving it in a bowl for about 30 seconds until warm and spreadable.
 - In a large bowl, combine pumpkin puree, softened almond butter, honey, and pumpkin spice. Stir until smooth.
 - In a glass bowl, microwave chocolate chips and coconut oil in 20-second increments until melted and smooth.
 - Pour a thin layer of melted chocolate into molds, filling about one-third. Freeze for 10 minutes.
 - Pipe the pumpkin filling into hardened chocolate cups until full.
 - Return filled cups to freezer for an additional 5-10 minutes until filling is firm.
 - Drizzle remaining melted chocolate over filled cups. Freeze for 1-2 hours until set.
 - Once set, remove cups from molds and store in an airtight container in the freezer.
