  • 1/2 cup Pomegranate Arils For garnish, optional but recommended.

Method
 

Step-by-Step Instructions
  1. In a large pitcher, combine fresh mint leaves, sugar, and lime juice. Muddle for 10-15 seconds.
  2. Optional: Strain the mixture through a fine mesh sieve into a bowl or clean pitcher.
  3. Fill tall glasses halfway with ice cubes.
  4. Pour the coconut rum mixture into each glass until about three-quarters full.
  5. Top each glass with sparkling water and gently stir to combine.
  6. Garnish with a sprig of fresh mint and a handful of pomegranate arils.
