- Preheat your oven to 400°F (200°C).
- Wash and finely chop your chosen mixed vegetables.
- In a large mixing bowl, combine the finely chopped vegetables with ricotta cheese, half of the mozzarella, Parmesan, garlic powder, onion powder, and Italian seasoning.
- Dust a clean surface with flour and roll out the puff pastry sheets until 1/8 inch thick. Cut into 4x6 inch rectangles.
- Place a spoonful of the filling at one end of each pastry rectangle and roll tightly, sealing the edges.
- Apply an egg wash to the tops of each roll.
- Bake for approximately 25 minutes or until golden brown.
- Allow to cool slightly before serving.
