Cooking Steps
- Preheat your oven to 300°F (150°C).
- In a mixing bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper.
- Place the beef short ribs in a large dish and pour the marinade over them. Cover with plastic wrap and marinate for at least 30 minutes, preferably overnight in the refrigerator.
- Heat a small amount of oil in a large pot over medium-high heat. Remove the ribs from the marinade and sear them for about 2-3 minutes on all sides.
- Return the seared ribs to the pot, pour the reserved marinade over them, cover, and roast in the oven for 3 hours.
- Remove the ribs from the pot, and mix cornstarch with water to create a slurry. Stir this mixture into the pot with the reserved juices and bring to a simmer until it thickens.
- Preheat the broiler and brush the thickened glaze over the ribs. Broil them in the oven for 5-10 minutes until caramelized.
- Remove from the oven and let the ribs rest for 15 minutes before slicing.
