Ingredients
  

For the Marinade
  • 1/2 cup Soy Sauce opt for low-sodium if desired
  • 1/4 cup Brown Sugar can substitute with coconut sugar
  • 1/4 cup Rice Vinegar apple cider vinegar works well as substitute
  • 2 tablespoons Sesame Oil use canola oil for a milder taste
  • 3 cloves Garlic (minced) fresh garlic is recommended
  • 2 tablespoons Fresh Ginger (grated) ground ginger can be used if fresh isn't available
  • 1 teaspoon Black Pepper adjust to taste
For the Beef
  • 3 pounds Beef Short Ribs well-marbled for best flavor
For Thickening the Glaze
  • 1 tablespoon Cornstarch can use arrowroot powder as an alternative
  • 2 tablespoons Water
For Garnishing
  • 2 tablespoons Green Onions (sliced)
  • 1 tablespoon Sesame Seeds sprinkle generously

Method
 

Cooking Steps
  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper.
  3. Place the beef short ribs in a large dish and pour the marinade over them. Cover with plastic wrap and marinate for at least 30 minutes, preferably overnight in the refrigerator.
  4. Heat a small amount of oil in a large pot over medium-high heat. Remove the ribs from the marinade and sear them for about 2-3 minutes on all sides.
  5. Return the seared ribs to the pot, pour the reserved marinade over them, cover, and roast in the oven for 3 hours.
  6. Remove the ribs from the pot, and mix cornstarch with water to create a slurry. Stir this mixture into the pot with the reserved juices and bring to a simmer until it thickens.
  7. Preheat the broiler and brush the thickened glaze over the ribs. Broil them in the oven for 5-10 minutes until caramelized.
  8. Remove from the oven and let the ribs rest for 15 minutes before slicing.
