Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a skillet over medium-low heat. Add thinly sliced onions and cook until caramelized for about 30 to 40 minutes.
  3. Add 1 teaspoon of sugar if desired, and sprinkle in fresh thyme and black pepper once onions are caramelized. Stir to combine.
  4. Roll out puff pastry on a floured surface and cut into desired shapes for tart shells.
  5. Place pastry on a baking sheet, spoon in the caramelized onion mixture, and top with crumbled goat cheese. Optionally drizzle with heavy cream.
  6. Brush edges with beaten egg for a glossy finish. Bake for 20 to 25 minutes until golden.
  7. Let cool slightly, then drizzle with honey before serving.
