- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish by spraying it lightly with non-stick spray or lining it with parchment paper.
- In a large mixing bowl, combine ½ cup softened butter and 1 cup brown sugar and mix until creamy. Then add ½ teaspoon baking soda, 1 and ½ cups rolled oats, and 1 cup all-purpose flour and stir until crumbly.
- Set aside about 2 cups of the oat mixture and press the remaining crumbs firmly into the bottom of the baking dish.
- Spread 1 cup of apricot preserves evenly over the base layer.
- Sprinkle the reserved oat mixture on top of the apricot preserves to cover it evenly.
- Bake for 30-35 minutes until golden brown on top.
- Allow to cool completely at room temperature before cutting into squares.
