  • 1 box Cake Mix any flavor, vanilla recommended
  • 2 large Eggs for moisture and binding
  • 1/2 cup Unsalted Butter melted
For Coating
  • 2 cups White Chocolate Melts or colored candy melts
  • 1 cup Coconut Flakes or mini marshmallows
For Assembly
  • 12 pieces Lollipop Sticks sturdy enough for cake pops
  • 1/2 cup Sprinkles optional, for decoration

Method
 

Baking and Assembling
  1. Preheat oven to 350°F (175°C) and grease a cake pan lightly.
  2. Prepare the cake mix by following package instructions, incorporating eggs and melted butter.
  3. Pour mixture into the pan and bake for 25-30 minutes until a toothpick comes out clean.
  4. Let cake cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  5. Crumble the cooled cake into a large mixing bowl using fingers or a fork.
  6. Add ½ cup of frosting to the crumbled cake, mix until fully combined and moist.
  7. Scoop tablespoon-sized portions and roll into smooth balls, placing them on a parchment-lined baking sheet.
  8. Melt the white chocolate in a microwave-safe bowl, dip one end of each stick into chocolate and insert into cake balls.
  9. Completely coat the balls in melted chocolate and roll them in coconut flakes. Let set before serving.
