  • 4 cups coleslaw mix can substitute with finely shredded fresh cabbage
  • 1 can black beans well-drained
  • 1 cup corn frozen or canned
  • 1 each red bell pepper diced; can swap with yellow or orange
  • 1 each jalapeño finely chopped; adjust amount for spice
  • ¼ cup green onions chopped; can use shallots
  • ¼ cup cilantro can omit or replace with parsley
  • 2 cups Chili Cheese Fritos or other crunchy toppings
For the Dressing
  • ½ cup sour cream or Greek yogurt
  • ¼ cup mayonnaise or plant-based mayo
  • 1 each lime juiced
  • 2 tablespoons chipotle sauce reduce for milder heat

Method
 

Preparation Steps
  1. In a large mixing bowl, combine coleslaw mix, black beans, corn, red bell pepper, jalapeño, green onions, and cilantro. Gently fold everything together until evenly mixed.
  2. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth and creamy.
  3. Pour the dressing over the salad mixture and gently fold until all ingredients are coated.
  4. Just before serving, add Chili Cheese Fritos and gently toss to incorporate.
  5. Transfer to a serving platter or bowls. Garnish with additional cilantro or green onions if desired.
