- Preheat your oven to 425°F (220°C). Wash and prick sweet potatoes with a fork. Bake for 50-60 minutes or until tender, or cook in an Instant Pot for 10 minutes on high pressure.
- Once cool, peel the skins off and mash the sweet potatoes in a large bowl. Stir in Parmesan cheese, minced garlic, kosher salt, and black pepper to combine.
- In a shallow bowl, combine panko and chili powder. Line a baking sheet with parchment paper.
- Scoop portions of the sweet potato mixture and roll into cylinders. Coat each piece in the panko mixture.
- Brush with olive oil and bake for 15 minutes, flip and bake for another 10-15 minutes until golden brown.
- Melt butter in a skillet, add thyme, parsley, and sage. Drizzle over baked tots before serving.
