For the Salmon
  • 2 fillets Salmon Fillets skin-on preferred
  • 2 tablespoons Olive Oil or avocado oil
  • to taste Salt
  • to taste Black Pepper
For the Topping
  • 1 package Boursin Garlic & Fine Herbs Cheese
  • 2 cloves Garlic freshly minced
  • 1 tablespoon Lemon Zest
  • 1 tablespoon Lemon Juice freshly squeezed
Optional Veggies
  • 1 cup Cherry Tomatoes for garnish
  • 1 bunch Asparagus trimmed
For Garnish
  • to taste Fresh Parsley chopped

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C). Lightly grease your baking dish with olive oil or line with parchment paper.
  2. Pat the salmon fillets dry with paper towels and place skin-side down in the prepared baking dish.
  3. Drizzle olive oil over the salmon, then sprinkle with salt and black pepper. Distribute minced garlic and lemon zest across the fillets.
  4. Spread a layer of Boursin Cheese over each salmon fillet, covering them well.
  5. Bake in the oven for 15-18 minutes until the salmon is opaque and flakes easily with a fork.
  6. Optionally, switch to broil for the last 1-2 minutes for a golden finish. Watch closely to prevent burning.
  7. Remove from the oven, drizzle fresh lemon juice and sprinkle with parsley before serving.
