For the Avocado Mojo Sauce
  • 1 medium Avocado Ripe for the best flavor.
  • 1/4 cup Fresh Cilantro Can substitute with parsley.
  • 2 cloves Garlic Adjust according to taste.
  • 2 tbsp Vinegar White wine or apple cider recommended.
  • 1 optional Jalapeño For added heat.

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C). Wash and cut the sweet potatoes into wedges. Toss with taco seasoning and olive oil.
  2. Spread sweet potatoes on a baking sheet in a single layer and roast for about 30 minutes, flipping halfway until golden brown.
  3. If using raw chicken meatballs, add them to the baking sheet with sweet potatoes halfway through roasting.
  4. In a blender, combine avocado, cilantro, garlic, vinegar, and olive oil. Blend until smooth, adjusting flavors as necessary.
  5. To assemble, drizzle avocado sauce in a bowl, add sweet potatoes and chicken, and serve.
