Step-by-Step Instructions
  1. Start by washing and scrubbing the potatoes until clean. Cut them uniformly into wedges or chunks.
  2. Place the cut potatoes into a large bowl filled with cold water. Soak for 30-60 minutes to remove excess starch.
  3. Preheat your oven to 400°F (200°C) and position an oven rack in the middle.
  4. In a large mixing bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper. Toss the potatoes in the marinade.
  5. Spread the marinated potatoes on a large baking sheet, making sure not to overcrowd them.
  6. Roast the potatoes for 20-25 minutes without interfering.
  7. After roasting, carefully flip the potatoes and pour the broth around them. Return to the oven.
  8. Continue roasting for an additional 25-35 minutes, flipping every 10-15 minutes.
  9. Once golden and crispy, remove from the oven and let rest for about 5-10 minutes before garnishing.
