- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
- In a mixing bowl, combine flour, oats, salt, and brown sugar. Cut in the cold butter until it resembles coarse crumbs. Set aside ¾ cup for topping.
- Press half of the crumb mixture into the prepared baking dish and bake for 15 minutes until lightly golden.
- In a saucepan, combine diced apricots, honey, vanilla, lemon juice, cinnamon, and water. Simmer for 10-12 minutes until thickened.
- Spread the apricot filling over the baked crust and sprinkle the reserved crumb mixture on top.
