Step-by-Step Instructions

  2. In a mixing bowl, combine flour, oats, salt, and brown sugar. Cut in the cold butter until it resembles coarse crumbs. Set aside ¾ cup for topping.
  3. Press half of the crumb mixture into the prepared baking dish and bake for 15 minutes until lightly golden.
  4. In a saucepan, combine diced apricots, honey, vanilla, lemon juice, cinnamon, and water. Simmer for 10-12 minutes until thickened.
  5. Spread the apricot filling over the baked crust and sprinkle the reserved crumb mixture on top.
  6. Return to the oven and bake for an additional 20-25 minutes until golden brown and bubbling.
  7. Cool completely in the dish on a wire rack before slicing into squares.
